Why were books removed from the Bible?

Considering that Jesus Seminar and Bart Ehrman represent the fringe of New Testament scholarship, I would be a little concerned. If they actually base our new canon on academic consensus rather than a small but well-publicized minority, then I won't have a problem with it.
